What is matùral method?

The matùral method is another way to make chocolate. Based on the ingredients and how to process cocoa beans. A fusion of the technique of the raw food preparation and the art of making bean to bar chocolate. delicate process with very simple steps. We process only in smaller batches, 10 kg at a time and only cocoa beans that have been collected, fermented and dried for this type of process. The beans are selected by hand, are “toasted” at 4°C for few hours. The peel is removed, reduced in nibs. They are pre-refined and then in the mill together with the other ingredient to achieve the right micron. There is  not a real conching. Working with the best aromatic cocoa beans is very easy and simple: we do not need to remove bitter characteristics. They are made of blocks and left aging for about a month. Delicate and short process, basically 3 hours of processing of the beans at temperatures below 42 ° C and one month of aging. We prefer to avoid the term raw and talk rather low impact or cold processed.

What is Lucuma?

Beloved by the Incas, lucuma is a super nutritious Peruvian fruit that contains beta carotene, iron, zinc, vitamin B3, calcium, and protein. Viewed as a symbol of fertility and creation, lucuma was called the “Gold of the Incas” and was used for a variety of applications. Recent research shows that lucuma may be helpful for supporting skin health, blood sugar, and even cardiovascular health. Lucuma in its whole form looks similar to an avocado, with a hard green exterior covering the sweet, soft fruit. The flesh is yellow and has a texture that is slightly reminiscent to that of a dry egg yolk. Many people say the taste of lucuma reminds them of a cross between caramel and a sweet potato. While it does contain a mellow sweetness, it’s low on the glycemic scale and typically suitable for diabetics. Lucuma is grown sustainably in this region without the use of pesticides and is intercropped with other plants to provide a wider benefit for farmers.
